With "Salty White", winemaker Theo Coles wanted to create an ode to the New Zealand coastline, an experimental, visionary wine blending 40% of the old (Muller-Thurgau) and 60% of the new (Sauvignon Blanc) of New Zealand.
The grapes are sourced from several organic vineyards, then whole-bunch fermented with natural yeasts, pressed and returned to amphora for eight months to finish fermentation.
He considers this one of his visionary wines, but even then they always share the trademarks of Hermit Ram wines: clean and linear with more than hint of something special.
Blend: 60% Sauvignon Blanc, 40% Muller-Thurgau

In 2012 Theo Coles discovered the Limestone Hills vineyard in Canterbury in the north of New Zealand’s South Island. Owned by Gareth Renowdon, Theo agreed to make some wine with him from his 1000 or so Pinot Noir vines.
Since then Theo has expanded the range to include the skin fermented Sauvignon Blanc and Müller-Thurgau, a field blend rosé and another Pinot Noir. The fruit comes from tiny vineyards throughout the Canterbury region, all naturally farmed without chemicals and Theo is keen to stress that every wine has its own story to tell.
