Believe it or not, over a decade ago our love for wine began with a glass of New Zealand Sauvignon Blanc.
Fast-forward to 2020 and we've finally brought in something from the New World—of course it had to be a Sauvignon Blanc from The Hermit Ram. But Theo Coles does it differently.
Sourced from two different vineyards, and fermented 6 weeks on skins for extra texture and aromatics, with 20% whole-cluster ferment and just 20ppm of SO2. This is not a Kiwi Sauv Blanc from the early 2000's. The classic gooseberry and apricot aromas are there to be coaxed out, and this satisfies what you expect from the terroir. But there's something exception in here, a wild edge but clean taste. Saltiness, freshness, and life.

In 2012 Theo Coles discovered the Limestone Hills vineyard in Canterbury in the north of New Zealand’s South Island. Owned by Gareth Renowdon, Theo agreed to make some wine with him from his 1000 or so Pinot Noir vines.
Since then Theo has expanded the range to include the skin fermented Sauvignon Blanc and Müller-Thurgau, a field blend rosé and another Pinot Noir. The fruit comes from tiny vineyards throughout the Canterbury region, all naturally farmed without chemicals and Theo is keen to stress that every wine has its own story to tell.
