  • Every wine lover in Hong Kong by now has heard of Jacques Selosse, but what about his closest influences – those of his neighbours and peers, such as the venerable old winemakers who run Fallet-Prevostat? Their wines are some of Selosse's personal favourites, and we can definitely see some similarities in their styles. 

    Martine Marie-Claire, the winemaker and co-owner of the estate makes just 28,000 bottles a year from 9 hectares, and funnily enough sells the same wine under several different labels like Fallet-Crouzet (the labels we have), Fallet-Gourron and Fallet-M. She then rests them in her immaculate cellars for 6-8 years before releasing them, allowing the Chardonnay to develop a deep complexity.

    This is 100% Chardonnay with fermentation in big wooden casks, and everything done as naturally as possible. The wine is very complex on the nose, ever so slightly oxidative but with ample elegant fruit, apples, berries and honey.

    She makes a Brut, Extra-Brut, and Brut Nature - and nothing else. All the wines are composed of 2/3rd from the current harvest, and 1/3rd of reserve wine from the year before. Only the dosage changes, and the Extra-Brut achieves that perfect balance of weight.
