  • It sounds like a dream, doesn't it? 100% Merlot from biodynamic fruit, fermented with natural yeasts only, and vinified without any oak in cement vats. Who even makes Bordeaux like that?

    Pretty much only vigneron Arnaud Daudier de Cassini, formerly of Château Figeac and Château Le Tertre Roteboeuf, who knows how to make classic, but electrifying Bordeaux that in our honest opinion is one of the greatest values in the region.

    We love his wines so much that we are the first and only people to import his wines into Hong Kong. This has had a few years to mature from the excellent 2014 vintage, and shows pure Merlot fruit with plums, flowers, and spices. The texture is the best part though, and it has sensually ripe tannins with a delightful freshness that is too often missing in wines of the region. This is highly recommended from us, and one of our great loves.

    Terroir: Clay and chalk
    Winemaking: Vinification for over 3 weeks. Natural yeasts. Elevage for 22 months in cement tanks with no oak. Bottled by gravity, unfined and unfiltered. 5g of SO2 per hectoliter added at harvest. Minimal amount of SO2 added just before bottling.
    Certification: Certified organic from ECOCERT.

  • Château Cassini is the tiny, biodynamically farmed 1.93 hectare estate of Arnaud Daudier de Cassini in Saint-Emilion. Here, the former maître de chai of Château Figeac and Château Le Tertre Roteboeuf works tirelessly to make the purest expressions of Merlot and Cabernet Sauvignon in the region. He is highly influenced by his friends Catherine and Pierre Breton, who helped him convert to biodynamic winegrowing, and also Dagueaneau, who showed him more about working in the vines.

    These are wines that are made without oak, and with lots of love. If you've ever wondered what un-manipulated Bordeaux tastes like, this is it.
