De Fermo - 'Le Cince' Cerasuolo d'Abruzzo 2017
This product is currently sold out.
Le Cince is a Cerasuolo rosè made with 100% Montepulciano.
Whole bunches are put into an old french pressoir and pressed. After 3-4 hours just the juice (without skins) is moved into big oak barrels (20hl) for fermentation. As is always the case: no yeasts are added and there is no temperature control. After the fermentation, the rough lees are separated from the juice by racking and the wine is put back into the same barrels for 7-9 months on the lees.
Le Cince is the name of a family of birds (Cinciallegra) that are a symbol of happiness. When Stefano's daughter was born her nickname was "Cincia" because of her smile and demeanor. The wine is dedicated to the women in Stefano's family.

The family farm is located in Loreto Aprutino (Abruzzo), halfway between the Adriatic sea (20km) and the southernmost European glacier (20km). In the vineyard, which covers 17 hectares at 270-320 meters of altitude, biodynamic principles are applied since 2009.
The current generation, led by husband and wife team, Stefano Papetti and Nicoletta De Fermo returned to the family farm's vineyards and olive orchards after having successful law careers in Bologna. The winery had not been in use since the mid 1950s.
Since resurrecting their family's cultural heritage in 2008 Stefano and Nicoletta have proven themselves to be stewards of their land and talented winemakers who understand that the best thing they can do is to intervene as little as possible in the cellar and let Loreto Aprutino do the talking.
