Thomas Pico's 'Beauregard' 2013 is marked by the low yields and subsequent concentration of the vintage, while still expressing the linear acidity of Chablis, and the lean steeliness of the vineyard. Beauregard isn't one of the finest 1er Crus for no reason; the Chardonnay from here is especially floral and elegant, allowing the wines to show well as they age.
'Beauregard' will take a bit more time than Pico's 'Butteaux', but it's fascinating now to see the evolution. There's soothing hints of acacia and honey, alongside the classic flint, mineral, and citrus notes of Chablis.

Thomas Pico is the 30-something year old winemaker/owner of Domaine Pattes Loup, a tiny 2.4 hectare estate founded in 2005. The term "rising star" is definitely overused when referring to young winemakers out of Burgundy, but Thomas Pico is the real thing.
He makes Chablis like nobody else does, and works biodynamically throughout his vineyards. Domaine Pattes Loup was even certified organic in 2009, a rare step for any producer so north in Burgundy.
