Thomas Pico is back in stock with a vengeance. After missing out on the 1er Cru Chablis editions of this wine in both 2011 and 2012, we've managed to secure an absolutely miniscule amount of his rich 'Butteaux' 2013's, which are more round than his 'Beauregard'.
Still, Pico never allows us to forget this is Chablis, as a racy vein of minerality, chalk, and flint jumps in and around the citrusy notes of Chardonnay. Though this is a natural wine with plenty of lees (dead yeasts) still floating around, the unfiltered nature of the wine lends plenty of complexity; don't be afraid at residue in the bottle. Even though it will age and improve over the next decade, it is drinking wonderfully now.

Thomas Pico is the 30-something year old winemaker/owner of Domaine Pattes Loup, a tiny 2.4 hectare estate founded in 2005. The term "rising star" is definitely overused when referring to young winemakers out of Burgundy, but Thomas Pico is the real thing.
He makes Chablis like nobody else does, and works biodynamically throughout his vineyards. Domaine Pattes Loup was even certified organic in 2009, a rare step for any producer so north in Burgundy.
