This is Chardonnay aged without any oak, so that the purity of the ripe peachy fruit is accompanied only by a fleshy acidity. This is made in late-harvested style—Pico's trademark—and it is just brilliant. Biodynamically grown, and low amounts of sulphur are added only at bottling.
The 2013's will be early drinking and ready for consumption. Crafted with indigenous yeasts as always.

This is an especially rich, intense Chablis that stands apart from the rest of the wines being made in the village for its depth and concentration. Thomas Pico is the 30-something year old winemaker/owner of Domaine Pattes Loup, a tiny 2.4 hectare estate founded in 2005. The term "rising star" is definitely overused when referring to young winemakers out of Burgundy, but Thomas Pico is the real thing.
He makes Chablis like nobody else does, and works biodynamically throughout his vineyards. Domaine Pattes Loup was even certified organic in 2009, a rare step for any producer so north in Burgundy.
